We have been pit-cooking Angus Tenderloin, Angus Top Round, Pork Butt, Chicken, Salmon, Rockfish, Steelhead Trout & Lamb over wood for the better part of 25 years. Sides include Miss Lucy's Cosmic Beans (which contain a healthy dollop of our Eastern Shore Pulled Pork, Tidewater Slaw (the proper topper for BBQ), Sweet Potato Biscuits & Peach Berry Cobbler.
Eastern Shore Pulled Pork: pork butts pit-cooked for 12 hours, dressed w/ apple cider vinegar, cane sugar & red pepper flakes. $7 per 1/2 pound.
Maryland Pit Beef: Angus top round pit-cooked to medium rare, dressing w/ sweet & tangy sauce, caramelized onion & horseradish. $7 per 1/2 pound.
Jamaican Jerk Chicken: whole birds marinated w/ lime, mustard, ginger, jalapeño & rosemary, pit-cooked for 4 hours, shredded and dressed with a sweet & tangy sauce. $7 per 1/2 pound.
Whole Angus Tenderloin: pit-cooked to a medium rare.
