In December 2006 SoBo’s Wine Bistro, the third of John and Tom Knorr’s restaurants opened to rave reviews. SoBo’s is focused on great locally sourced and sustainable foods and wine with a bit of an upscale flare. The staff is friendly and knowledgeable and the atmosphere is warm and intimate.
Featuring a progressive wine list with 100 New World wines makes it easy and fun to select something that will please anyone, from the novice to the most experienced pallet. The wine list wines encourages experimentation; at SoBo’s we believe that wine is made for drinking and have selected wines and priced them in such a way that encourages guests to do just that.
The food is contemporary American cuisine, with lunch and dinner menus that change frequently to reflect the flavors of the seasons as well as the requests of our guests.
In April 2009, the brothers opened a boutique production brewery in Delaware, Evolution Craft Brewing Company. They were intrigued with the artistry in beer and created beers with their brew master that would pair well with the foods they were creating in the kitchens of their restaurants. In June of 2009, the Knorrs rebranded the restaurant as “Sobo’s Wine Beerstro”. They wanted to highlight the restaurants innovative cuisines with wines and beers they are creating as well as other beers from craft breweries from around the United States.
